Triple Berry French Toast Casserole

Merry Christmas Everyone! Here is a recipe I made for my family on Christmas Eve morning along with the Maple Pecan French Toast Casserole you can fine HERE. They were a hit with the whole family! Enjoy!


Ingredients:

7 cups of thick cut bread or half a loaf of your favorite bread

6 large eggs

1 1/2 cups milk

2 tbsp brown sugar

2 tbsp maple syrup

1 tbsp vanilla extract

1 1/2 tsp cinnamon

1/4 tsp nutmeg

1 tsp salt

1/2 cup of sliced strawberries, 1/2 cup blueberries, 1/4 cup raspberries

Topping:

Powdered sugar


Optional Toppings:

Maple syrup

Butter

Whipped cream

Yogurt


Directions:

  1. Grab a 9x13 glass pan and spray with non-stick cooking spray or oil with butter or olive oil.

  2. Cut the bread into cubes and place in pan. Let the bread sit out for a couple hours to dry. (Dry bread or a couple days old bread works best).

  3. In a large bowl add eggs, milk, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt. Whisk together.

  4. Add egg mixture to the bread pan and let bread soak up the mixture.

  5. Add the fruit on top.

  6. Cover with cling wrap and let sit for a couple hours or overnight in the refrigerator. (I let mine sit overnight in the fridge so it would be ready for the oven in the morning).

  7. Preheat oven to 350ºF.

  8. Take the cling wrap off and cover with tin foil.

  9. Bake for 25 to 30 minutes with the tin foil on. Then uncover the casserole and back for an additional 15 to 20 minutes or until the top is golden brown and crispy.

  10. Take out the casserole and let it cool for a couple minutes and top with powdered sugar by putting the powdered sugar in a colander and shake over the casserole.

  11. Enjoy topped with maple syrup, butter, and/or whipped cream.
