All you need is 5 ingredients! This is a perfect recipe to make a big batch of roasted sweet potatoes and ground beef then you have pizza bowl meals prepped and ready. I mean, who doesn't love pizza in any form?
Ingredients:
3 medium sweet potato's
A drizzle of avocado or olive oil
1lb ground beef or ground Italian sausage
1-2 cups steamed mixed veggies
1-2 tbsp pizza sauce per bowl
Optional - top with cheese
Directions:
For the sweet potatoes: preheat oven to 400ºF
Dice sweet potatoes and put on a cookie sheet pan with parchment paper.
Coat sweet potatoes with oil and message into them.
Bake in the oven for 20 minutes then flip them, bake for an additional 20 minutes until slightly browned.
While potatoes are baking add ground beef or sausage to a pot and heat on medium to high heat, cook until meat is fully browned. If using ground beef add salt and pepper to taste.
Stem frozen mixed veggies in another pot with a lid, add a splash of water and heat for about 10 minutes or until softened. Stir occasionally.
Add sweet potatoes, ground beef/sausage, veggies, and pizza sauce. Mix together and enjoy. Can also top with cheese or parmesan cheese.
