This is a fun recipe to make any time of the day. It is very high in protein and will keep you feeling full for a long time. If you are someone that likes savory foods for breakfast this one is for you. I would also eat this for dinner if I needed an easy dinner idea. If you have leftover hamburgers from dinner one night this would be a good recipe to try.
This recipe can be pretty big for some people. For me, I would reduce the recipe slightly and maybe add a slice of toast on the side.
Ingredients:
3 eggs
1/2 tbsp avocado oil or olive oil or butter
2 tbsp milk
1/4 tsp salt
1/4 tsp pepper
1 grilled leftover hamburger
1/4 cup diced tomatoes (optional)
1/4 cup diced onions (optional)
1/4 cup chopped spinach (optional)
1/4 - 1/2 cup shredded cheese
Topping ideas:
ketchup
mustard
pickles
Direction:
Add eggs and milk to a medium bowl and whisk.
Chop the tomatoes, onions, and spinach and set to the side.
Add oil to a pan and heat over medium-low heat.
Once the pan is heated add the whisked eggs to the pan and add salt and pepper.
Then add the rest of the ingredients (hamburger, tomatoes, onions, spinach, and cheese)
Place a cover over the pan and let it cook through for about 3-5 minutes or until the eggs are cooked to your liking.
When done the egg skillet should slide right out of the pan onto a plate.
