Party food for the whole family. A fun idea for any time and it is very easy to through together on such short notice.
I also make my own taco seasoning (recipe below) because why not. This seasoning makes a lot too so you can save it for future taco nights as well.
Ingredients:
1 bag of chips (I use blue corn chips)
1 lb ground beef
2 tbsp taco seasoning (recipe below makes 6 servings)
1/2 of a can of black beans drained
2 cups shredded cheese
Toppings:
1 cup shredded lettuce
1 cup shredded spinach
1 cup diced tomatoes
1/2 cup diced onion (optional)
guacamole (can find my guac recipe by clicking here)
salsa
Taco seasoning:
4 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tbsp paprika
1-1.5 tbsp ground cumin (depends on how spicy you like it)
1 tbsp salt
1 tsp black pepper
Add 2 Tbsp per 1lb of meat.
Directions:
Cook ground beef in a medium size pot or pan until browned.
Add 2 tbsp taco seasoning + 1/3 cup of water to the pan.
Let meat simmer for 1 min.
Spray a baking sheet topped parchment paper with non-stick cooking spray or use any oil of your choice.
Place chips on the baking sheet.
Layer with the taco meat, then the black beans, and the cheese
Bake at 375ºF for 12-15 minutes.
When done, take it out of the oven and top with toppings of your choice. I used tomatoes, lettuce, spinach, guac and salsa.
Enjoy out of the pan with family and friends or scoop on a plate.
Recipe makes ~1 full cookie sheet of nachos
