Blueberry Blender Oat Pancakes

This recipe is an easy clean up. No need to dirty a lot of bowls, all you need is a blender for this one. And you can pore the batter right out of the blender onto the skillet. So easy, but most importantly very delicious. If you like oatmeal you will like these pancakes. They are so soft and fluffy.

Ingredients:

2 1/3 cups rolled oats

2 eggs

1/4 cup coconut sugar or white granulated sugar

2 tbsp avocado oil or olive oil or melted coconut oil

1/4 cup apple sauce

1/2 cup milk (any kind works)

1/2 tsp salt

1 tsp baking powder

1tsp baking soda

2 tbsp flaxseed meal (optional)

1 tsp lemon juice

1 tsp vanilla extract

1 cup water + additional 1/2 cup slowly to get the right consistency

1 cup blueberries and/or chocolate chips


Directions:

  1. Place oats in the blender and blend until it forms a flour consistency.

  2. Add the rest of the ingredients and blend for about 3-5 minutes or until fully blended through.

  3. Add additional water or milk if needed to make the batter more runny.

  4. Heat and grease a pan or pancake skillet to 400ºF.

  5. When the pan or skillet is ready poor the pancake mix on to desired pancake size.

  6. Top pancakes with blueberries or chocolate chips before flipping.

  7. Flip pancakes when the sides start to bubble.

  8. Enjoy with peanut butter, maple syrup or just plain!


Recipe makes ~30 pancakes
