This is a quick and easy recipe for a time you need an easy meal idea. This recipe is also great for repacking for lunch the next day.
2-3 chicken sausage links
1 bell pepper
1/2 cup sliced mushrooms
1 tsp avocado oil or olive oil
2 tsp dried oregano
2 tsp dried basil
1 tsp salt
1 tsp black pepper
1/4 tsp garlic powder
1.5-2 cups cooked rice
Make rice per package instructions. (I add the rice and water to a pot + a pinch of salt and a drizzle of oil, and I let that come to a boil. Then I stir and and switch the heat to low/simmer, and I let it simmer for 10-15 minutes or until rice is soft)
Heat oil in a large pan over medium heat.
Dice the bell pepper and onion in long strips and add to the pan.
Dice chicken sausage and add to the pan.
Stir and let cook for 2-3 minutes.
Add dried oregano, dried basil, salt, pepper, and garlic powder.
Stir and and let cook for another 2-3 minutes.
Enjoy the stir fry on top of rice or mixed in.
